A good piece of chicken does not need much — a hot griddle, real produce and a bright, honest sauce. This is our Desidero-style halal lemon chicken, a recipe you can make at home. It isn't on our menu, but it is exactly the kind of simple, well-made dish we believe in: light, fresh and full of flavour.

Key ingredients
- Halal chicken breast, from a certified halal supplier
- Lemon — juice and a little zest
- Capers, rinsed
- Garlic, one clove, finely sliced
- Extra virgin olive oil
- A knob of butter (optional, for a rounder sauce)
- Fresh parsley, salt and black pepper
Step by step, the Desidero way
- Prepare the chicken: butterfly or lightly flatten the breast so it cooks evenly. Season with salt and pepper.
- Hot griddle (a la plancha): get the plancha or a heavy pan properly hot with a little olive oil. Sear the chicken 3–4 minutes per side, until golden outside and just cooked through. Don't overcook it — juicy is the goal.
- The lemon sauce: lower the heat, add the sliced garlic for a few seconds, then the lemon juice, capers and a knob of butter. Swirl until it turns glossy.
- Bring it together: return the chicken to the pan, spoon the sauce over, and let it rest for a minute.
- Finish: a little lemon zest, fresh parsley and a drizzle of olive oil.
Serve with a fresh salad or roast potatoes. Simple, light and bright — the way we like it.
