Vegan Pumpkin Lasagne (Home Recipe)

At Desidero Pizzeria Marbella, we love sharing Italian recipes beyond our restaurant menu, and this one is perfect for autumn. Pumpkin is a wonderfully versatile vegetable, and roasted pumpkin, tomato and lasagne sheets come together beautifully. You can make it fully plant-based with vegan cheese and a little nutritional yeast; and if you don't follow a vegan diet, a good cow's-milk cheese works just as well.
Please note: this vegan pumpkin lasagne is a Desidero home recipe to make at home and is not currently part of our menu. At the restaurant we make a classic lasagne with meat ragù, béchamel and parmesan.
Ingredients (serves 4)
- 1 kg pumpkin
- 1 jar of tomato and basil sauce
- 500 g crushed tomatoes (passata)
- 200 g lasagne sheets (wholewheat, if you like)
- Chilli flakes, to taste
- Salt and black pepper, to taste
- 2 handfuls vegan cheese + 1 handful nutritional yeast (or the same amount of cow's-milk cheese)
- 4 tbsp pumpkin seeds
- A little olive oil
How to make it
- Heat the oven to 200°C.
- Prepare the pumpkin. Halve it, scoop out the seeds, and slice it thinly.
- Roast it. Drizzle with olive oil, season with salt, pepper and a few chilli flakes if you like, and roast for about 30 minutes.
- The sauce. Put the passata in a bowl and stir in the tomato and basil sauce.
- Assemble. Spread a layer of sauce in an oven dish, top with lasagne sheets, then a layer of roasted pumpkin. Repeat: sauce, sheets, pumpkin. Finish with a little sauce on top. Scatter over the cheese and pumpkin seeds.
- Bake for a further 25 minutes. Enjoy!
The idea behind it
What makes this lasagne is the contrast: the sweetness of roasted pumpkin, the acidity of the tomato, and the crunch of the seeds on top. The nutritional yeast brings that savoury, almost cheesy note if you keep it vegan. Simple, seasonal and very comforting.
