Halal Grilled Chicken in Marbella: the recipe for a genuinely juicy result

Grilled chicken looks like the simplest dish in the world, which is exactly why it goes wrong so often: overcooked, dry and stripped of flavour. The secret to juicy grilled chicken

There is no magic here, only technique. Four things make the difference:

  1. Even thickness. Butterfly the breast or flatten it gently to around 2 cm. If one end is thick and the other thin, one will be raw and the other dry.
  2. Marinate, but not for too long. Thirty minutes is enough. Lemon tenderises the fibres, but hours of acid turn the texture mealy.
  3. Very hot pan, and hands off. The chicken should hit a properly hot surface and stay still until it releases on its own. That is where the golden crust forms.
  4. Rest it for 5 minutes. The step almost everyone skips. Resting lets the juices redistribute instead of running onto the plate.

Ingredients (serves 2)

  • 2 halal chicken breasts (about 200 g each)
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon + zest of half
  • 2 garlic cloves, finely chopped
  • 1 tsp dried oregano
  • 1 tsp sweet paprika
  • A few sprigs of fresh parsley, chopped
  • Salt and freshly ground black pepper

For the lemon and caper sauce (optional)

  • 1 tbsp drained capers
  • Juice of half a lemon
  • 1 tbsp extra virgin olive oil
  • Chopped parsley

Step-by-step method

  1. Prepare the meat. Butterfly the breasts or flatten them gently with a rolling pin between two sheets of baking paper until evenly thick. Pat them completely dry — surface moisture prevents browning.
  2. Marinate. Combine the oil, lemon juice and zest, garlic, oregano, paprika and pepper. Coat the chicken and leave for 30 minutes at room temperature (or up to 2 hours in the fridge).
  3. Heat the pan. Bring it to high heat until a drop of water dances on the surface. Add a thin film of oil and spread it.
  4. Salt at the last moment. Season with salt as the chicken goes into the pan, never before — salt draws water out of the meat.
  5. Sear 4 minutes per side. Lay the breasts down and do not move them. When they release easily and show a deep golden colour, turn once and repeat. At 2 cm thick, 8 to 10 minutes total is usually enough.
  6. Check the temperature. The centre should reach 75 °C. Without a thermometer: the meat should be white in the middle, firm but with a little give, and the juices should run clear.
  7. Rest for 5 minutes on a board, loosely covered with foil.
  8. Finish with the sauce. Mix the capers, lemon juice, olive oil and parsley, and spoon it over just before serving.

What to serve it with

  • Grilled vegetables: courgette, pepper and aubergine, cooked in the same pan with a little oil.
  • Roast potatoes with rosemary and flaked sea salt.
  • Greek salad: tomato, cucumber, red onion, olives, feta and oregano — the fresh contrast works perfectly.
  • Fresh pasta for a fuller plate.

Common mistakes to avoid

  • Cooking chicken straight from the fridge: it cooks unevenly. Take it out 20 minutes ahead.
  • Covering the pan or lowering the heat: the chicken steams in its own moisture and never browns.
  • Piercing the meat to check doneness: every puncture is lost juice.
  • Slicing it immediately: the juices end up on the board rather than in the bite.
